I have found that the most important thing to do when following a restrictive diet is to focus on the foods that you can eat rather than the ones that you cannot.
This recipe includes three things that I find really comforting & they just happen to taste delicious together. Bacon, Fried Crispy Sage and Sweet Potatoes. I picked up some Applegate Bacon which I tried in this recipe for the first time today. Its FANTASTIC. (Thank you Applegate for all your quality products!). No nitrates and less than 2% sugar. Does it get much better than that? I used the entire package in this recipe (applegate packages are a little smaller). Feel free to use as little or as much as you would like.
Sage is one of those herbs that I love or hate depending on how it is prepared. Its strong piney flavor can take over a dish if used improperly. But when used properly it will shock your taste buds with goodness. Frying sage is the magical secret. The leaves becomes crispy and outrageously good. This recipe calls for fresh sage, if you don’t feel like buying it, the dried variety will also work. Though it won’t be nearly as good. If using dried sage add it in with the potatoes rather than prior to them.
Bacon and Sage Sweet Potato Hash
1/2- 1 package of bacon cooked – reserve the fat.
1 Large Sweet Potato Grated - dried with a paper towel
1 small handful of chopped fresh sage (stems removed)
Salt & Pepper to taste.
- In a large non-stick or cast iron pan cook the bacon. (The level of crispiness is up to your liking).
- Remove the bacon and reserve the bacon fat. (There should be 2-3 TBS in the pan).
- Add the sage leaves and cook until they become crispy. Stir in the grated sweet potato. Cook until it is cooked through and slightly crispy on the edges.
- Chop the Bacon- stir in and serve hot.
