I searched far and wide for an easy to make gluten free pasta without a million ingredients. I found a limited number of recipes and they were all Rice Flour based. The other thing I found bothersome was that most of these recipes stated that the pasta had to be hand cut. I don’t know about you guys- but I sure as heck was not ready to say Goodbye to my Lovely Red Hand Crank Pasta machine.
So here is where we Insert Millet Flour. Oh how I love it. Cooked millet is a favorite in our household -I like to say that it has a slight ” buttery corn bread” flavor to it. It is a great source of Protein, essential amino Acids and Fiber. And to top everything off its easy to digest. For those out there like myself with a sensitive digestive system- Millet is a God Send. I used Bobs Red Mill Stone Ground Whole Grain Millet Flour.
It was super important to me that EVERYONE with any food allergy or intolerance could partake in this fun recipe so I created 2 versions.
The Gluten Free Millet Pasta recipe is where I began. It is Gluten/Dairy/Soy/Rice/Corn free but contains eggs. This dough is incredible. Treat it like the old fashioned semolina dough- its just as tough! Roll it Crank it- Do whatever you want to it.
The Second version is my Vegan Gluten Free Millet Pasta. This version naturally is Gluten/Dairy/Soy/Rice/Corn/Egg Free. This dough is a tad bit sensitive compared to its eggy counterpart. Treat it gently as you crank it through your pasta machine. The end results will please you!
