Cookies can make an awesome (and FUN) Breakfast.  Its just that those cookies in cereal boxes filled with junk white flour, and white sugar..probably should not be eaten by anyone..let alone fed to a child for breakfast.

First let me applaud you if you have made the choice to feed your kid(s) REAL Food.  There is no greater gift you can give a little person than a start filled with amazing food to nourish their growing little bodies – and to  instill in them lifelong habits.

Your little people, sometimes deserve cookies for breakfast. And heck, you probably do too!  Especially if you have allergies, food intolerances or celiac.  Life should never be about what you can’t have..but what you CAN have.

I hope more than anything this recipe gives you back something that perhaps you felt you lost. I had a blast developing it, and I hope you have just as much making these tiny little crunchy cereal cookies, and even more fun pouring them into a bowl with milk.

Paleo Cookie Crisp Cereal

 

  • 1 packed cup of blanched almond flour
  • 1 cup tapioca starch
  • 1/2 cup coconut palm sugar (organic white sugar, sucanat or another granulated sugar of choice should work!)
  • 1 Tablespoon vanilla extract
  • 1/2 teaspoon salt
  • 2 teaspoon baking power (I use double acting)
  • 1 teaspoon oil or melted butter
  • 2 Large Eggs
  • mini chocolate chips (I used Enjoy Life brand)
  1. Preheat oven to 350 degrees and line a baking sheet with parchment paper. 
  2. Mix together the cookie dough ingredients, leaving out the chocolate chips.
  3. Put the cookie dough into a piping bag. Squeeze rows of tiny “candy dots” sized cookies (about an 1/8 of a teaspoon) onto the cookie sheet, leaving a little space between each cookie. (Not much space though, as they will only spread a tiny bit!)
  4. Stick 1-2 chocolate chips into each mini cookie.
  5. Bake 6-7 minutes until firm and lightly golden.
  6. Repeat with two more trays (3 trays total).

I’d use the mini-chocolate chips on these. Going to try with another flour (possibly fava) since I can’t have almonds.

Sadly Fava won’t work..its way starchier than Almond. You would need to use another nut or seed flour in place of the almond.

Whiz some raw sunflower seeds for a little bit (so as *not* to make nut butter) in a food processor or really good blender. Boom! “Sunflour”.

No- the starch is essential! Its what makes the cookies crisp enough to handle milk.

No.. theres supposed to be egg(s) and I screwed up big time and didn’t write down how many I used. What a nightmare..I swear I have never done this before! I’m in the kitchen right now resolving this.

I’m making these right now! Except one thing, are you sure it’s 1tsp of oil or 1 tbsp? My batter is very crumbly :(

I screwed up and didn’t write down how many eggs I used in my notes. I’m terribly sorry..I’m in the kitchen right now making them to figure out how many I used!! If you set your dough aside it should be fine for you to add the eggs!

Thanks for the update. I ended up using water until I got a decent consistency. The kids and husband think they are the cutest little snacks! I will be redoing these this weekend with the eggs. I can hardly wait! Thanks for the yummy recipe!

Not so much… they don’t have the right texture or consistency. They didn’t get crispy enough and I was afraid to cook them too long. It could work… but it won’t be the same. I wonder if you baked them then dehydrated them to help them get crispy without burning. Good luck!

btw… being that I didn’t have mini chips and that I live too far from the grocery store, I shaved dark chocolate into the batter instead. It worked great and the shavings only jammed up my piping thingy 2 times. Worked great!

I used eggs as that dry the cookies out in the oven so they are perfect for milk. You could try flax eggs- but I’m not sure what kind of results you’ll have.
If you experiment please let us know how they turn out!

This recipe looks very good. I would also use as a snack for work :) Also, I have to ask…where did you get that spoon? I have seen and been looking for silverware like that for about 3 years and can not seem to find it. I love the handle :) Thanks!

The spoon came from target! It’s probably not what you want though as its tiny! Half sized.. The set came with 4 matching spoons. Got them early spring I think..

Potato starch tends to dry things out a bit more- but I think it’s worth a shot to use it. Let us know how the cereal turns out with it.

Kasie, I have substituted sunflower seed flower and pumpkin seed flour (strong taste) in many of Brittany’s recipes. I give the seeds a whirl in the food processor.

I’m relatively new to gluten-free baking for my son that has Celiac. I haven’t baked many GF foods yet, since I’ve been busy trying to get the main staples perfected. Anyway, do you have a recommended source to buy blanched almond flour? I’ve only been able to find almond meal. Are those interchangeable?

I get mine from Amazon. Being that I live 1 1/2 hours from any place that sells it, I like to buy it online. I have gotten Honeyville Blanched Almond Flour. Also, from what I understand, some recipes such as cooking can be interchanged with meal, but baking tends to be more precise on what it calls for. Hope this helps : )

Just made them, they were a blast for my 3 year old to help with the chocolate chips! A great lesson in patience. I used 1 cup arrowroot instead of the tapioca starch and they worked great, crunchy and delicious! Thanks again!

Yes, especially for a 3 year old, but she is my little helper in the kitchen :) She also loved topping her dessert of coconut milk ice cream with them and I will admit, I did the same…..awesome!

OK..YUM! Perfect recipe for our teen sons who are becoming wheat free due to allergies/digestion issues. I’m going to try chopping a frozen sugar free chocolate bar and mixing in to spare the last step of pressing chips into the dough. You are a clever cook-ie (pun intended! LOL!) THANK YOU!! :-)

Made these today. Can’t have eggs so i made flax eggs and it worked. Needed a little extra moisture so I added a tiny bit of cashew milk. Very crunchy and very yummy. Had to let them cook a bit longer to get the crunch but it worked. My grandson will love these.

This is great! I made this using sunflower seed flour, 1 to 1 mix of flax meal and tapioca flour for eggs and crispiness and i did not use any chocolate chips as I wanted to be able to add blueberries. YUMMY! I got tired of piping the little dots so I just spread the last bit of dough very thin on parchment paper, sprinkled some coconut sugar and cinnamon on top and made crackers! Or, cinnamon toast crunch, which is what it tasted like!!! I may use this to make puppy chow this winter!

I made these this morning, and ate a bowl for lunch. Oh my yum! I used Arrowroot powder instead of Tapioca, but otherwise followed the recipe by the book. Since I didn’t have a “real” bag for piping, I put the batter in a small Ziploc baggie and cut the tip off of one of the corners. It worked great! Thanks for offering such a tasty treat!

You are def going to need a granulated sugar for this recipe- the honey will make the dough too wet! Feel free to use a different granulated sugar if you can’t find palm sugar.

Wow!! I’m impressed. I didn’t expect it to be this good. I’m having me a bowl with coconut milk as we speak. I had ran out of vanilla and used maple extract instead. I’m not sure it is paleo but it’s all I had at the moment. I will make it again with real vanilla. I hope my husband likes it as much as I liked it. Thank you!

Well, mine don’t look nearly as beautiful as yours, but they taste good! I used arrowroot powder because that’s all I had. Mine didn’t brown very much on the top. The kids think they are delicious though and are anxiously awaiting the morning when they get to have cereal!
