Every day, I receive emails, and facebook messages with baking substitution questions. With the explosion of food intolerance and allergies- I have found that no two of us have the same exact dietary needs. One of the best things we can each do is spend a little time learning how to bake with the ingredients we can use.

Roughly one year ago Iris Higgins and I began a huge project to write two cookbooks that details how to use and exchange 12 different Gluten Free Flours, How to replace Dairy, Corn, Soy, Eggs and Refined Sugar . We wanted to make life easier on each of you. We made many of our recipes upwards to 50 times with different flours, with different ingredients to replace all of the common allergens. We took notes and studied intensely what happened each time we made a change to a recipe. We did it all so that we could fill the pages of our books with useful information that would save home bakers times and money. Gluten free baking can be an absolute joy- its just a matter of knowing where to begin.

In this weeks podcast Iris and explain for 40 minutes how to make substitutions! We Discuss:

- How to Substitute Liquid Sugar For Granulated, and how to exchange any granulated for granulated.
- Tips for Baking with Stevia
- How to replace dairy in any recipe.
- Our favorite flour combinations. (With and without grains)

This book looks wonderful! :) Should I be drawn, I would like to win part 1. I’m still new to gluten free baking and so haven’t tried too many flours yet, but so far I’ve had the best results with rice flour and coconut flour.

I’d love to win part 1. A quick question for you: do your substitutions include subs for xanthan gum and guar gum? I definitely CAN’T handle either. Great blog!

Although both books look awesome, I would like to win The Essential Gluten-Free Baking Guide Part 1. My favorite flours to bake with are buckwheat, teff, and coconut; however, I have not had too much experience with many flours due to lack of knowledge of how to use them/make substitutions. I forgot to tell you what flours I use. I mostly use Bobs red mill all purpose flour, rice flour, tapioca flour and potatoe flour.

How can one choose from 2 baking guides that will help in so many ways. You can’t have one with out the other. Of course I would love both, and the flour I love to cook with Almond & Coconut.

I would honestly be super beyond grateful for either part 1 or 2. Baked goods were on the top of my favorites list when I had to make some lifestyle and diet changes and it was the hardest category for me to “give up.” I’ve been so intimidated by the idea of gluten free baking that I haven’t figured out much about how to do it successfully, so I just haven’t been baking. (Sad, I know.) I would love to have a resource (that is accurate…by people who actually know what they’re talking about) that can help take the daunting factor out of the equation and inspire me to start baking again…gluten free! =) I would love to be able to successfully use almond and coconut flours in baking.

Wow! I learned so much from listening! The most useful was that xylitol can make some cookies more moist, which totally explains the cookies that I made this morning that didn’t get as crisp as the author said they would!

I’ve only ever used the premixed gluten free flours when baking for my gluten free friends, but I’m excited to try some of the other ones in your cookbooks and blog — almond, coconut and chestnut in particular. That being said, I would LOVE to win part one of the gluten free baking guide!

I would love to win the first part. I’m newly all grain, dairy, egg, and soy free. Been most meat free for years but am trying to add some back in through trial & error. I’ve attempted almond flour but it did not turn out correctly. I’m going to listen to the pod cast later when I’m not procrastinating (in nursing school)…I am having trouble substituting in recipes so it sounds perfect for me.

I would love to win either of these! The flours I use most often are almond, brown rice, sorghum, and millet. I have enjoyed buckwheat and teff when I’ve used them and would like to use them more. I’ve had hits and misses with quinoa, so would like to learn more about how to make it a success every time!

I loved the podcast! I’m most interested in the egg free baking and the break down of each flour and it’s properties. My biggest challenge has been baking without eggs. Also, I can’t wait to read about the quinoa secrets!

I loved the podcast! Everything in it was super helpful, as always. My favorite part was how to exchange the sugars. I read about this in your first cookbook, but I liked watching/hearing you explain it. All of the other areas you covered were very informative as well.
