Seasonal Sunday (6-05-11) with a recipe for Strawberry Caprese Salad with Peach Balsamic.

Welcome to this weeks Seasonal Sunday Event!

This week I would like to highlight the following fantastic spring inspired recipes shared at last weeks event. (I had a hard time picking just a few- as there were so many GREAT recipes shared..Check them out!)

If you follow along weekly with Seasonal Sundays- 2 weeks ago you may have seen my Heirloom Caprese Salad with Pear Balsamic. I really can’t  get enough Caprese Salad this time of year- so this week I thought I would pass along another fun variation that I came up with.

Strawberry Caprese  Salad with Peach Balsamic

Ingredients:

Mozzarella Cheese (or Vegan Mozzarella -which I have used here)
Sliced Strawberries
Basil Leaves
a tiny pinch of Salt
Peach Balsamic (or try drizzling on Chocolate Sauce!)

Layer in any order- serve as an appetizer or dessert.

Spring (March 21st- June 20th) : Crayfish, Soft Shelled Crabs, Lamb, White Peppercorns, Spring Onions, Sweet Onions, Green Garlic (Garlic Scapes) Garlic, Cilantro, Chives,Cucumbers, Hyssop, Sprouts, Onions, Green Beans, Potatoes, Fingerling potatoes, New Potatoes, Artichokes, Sunchokes, Broccoli Rabe, Corn Shoots,   Asparagus (Green, Purple and White) Fava Beans,Turnips,  Bamboo Shoots, Ramps, Loquats, Moral Mushrooms,  Wood Ear Mushrooms, Mushrooms (general) Beets, Golden Beets, Carrots, Cauliflower, Celery, Leeks, Greens: (Lettuce, Miner’s Lettuce/Claytonia, Arugula, Kale, Spinach, Baby Spinach Swiss Chard, Rainbow Chard) Red Mustard, Ramps, Dandelion Greens, Fiddlehead ferns, Parsley, Peas, Pea Shoots,  Radishes, Black Radishes, Radish Sprouts, Rhubarb, Samphire, Stinging Nettles, Cardoons,  Cabbage, Zucchini Blossoms, Sorell, Heirloom Tomatoes, Watercress, Avocado, Figs, Raspberries. Strawberries. Pineapples, Mango, Kiwi’s Cherries, Apricots. Key Limes, Limes, Meyer Lemons, Lemons, Oranges. (Naval Oranges), Grapefruit, Grapes, Kumquats, Peaches (late spring) Melons( also late spring) &  Mint.

Silly me, I forgot to add that your caprese salad looks fantastic. Raw tomatoes are pretty much the only vegetable I won't eat. I love the idea of substituting strawberries. Strawberries, fresh basil and fresh mozzarella sound great together.

This looks incredible! Did you just purchase a peach balsamic or do you have a recipe for it? I looked but my pregnant brain could have missed it. Thank you for such a fabulous resource!!!
