After creating my strawberry marshmallows I could not resist throwing together these Rice Crispy treats! It’s not often that I post recipes here that are not grain free or paleo(ish). I have not been following paleo guidelines for about 6 months (I followed the diet for health reasons for a little over a year to put my hashimotos into remission and to overcome systemic candida). Once I got these health issues well under control I found that adding some additional carbs to my diet really helped to benefit my thyroid function. Since most of you come here expecting grain free/paleo- I will keep it as an ongoing theme. But, once in awhile may I throw in some basic gluten free recipes like this one.

These Rice Crispy Treats are really fun. The flavor is so pure and clean tasting since I used real strawberries. To make them healthier you can opt for brown rice crispies- rather than the refined white cereal. Using my strawberry marshmallow recipe you will end up with an intensely delicious strawberry flavor. (Which I LOVE). But if you want to keep things less complicated and don’t want to be bothered with making your own marshmallows you could just use the chopped freeze dried strawberries alone. (Note: you may also be able to get away with adding some powdered freeze dried fruit to store bought marshmallows when you melt them on the stove before stirring in the rice crispies. To make the powder simply throw the freeze dried strawberries (or other fruit of choice) into a coffee grinder. I’d recommend adding as much as 1/2 a cup of powder to the melted marshmallow!)

Feel free to get creative with using other freeze dried fruits in these. For example- mixing strawberries and bananas would be delish. You could used mixed freeze dried berries or freeze dried blueberries with a little lemon zest or lemon extract added to the melted marshmallow. OR how about adding some chocolate chips to the strawberry recipe I have posted below? The options are endless. Have fun and make the recipe your own.

Strawberry Rice Crispy Treats

 

  • 1 recipe of my Homemade Organic Marshmallows OR Strawberry Marshmallows OR One10 oz. bag of regular marshmallows
  • 3 Tablespoons Earth Balance butter (or regular butter)
  • 6 cups of rice crispies (brown or white rice)
  • 1 bag (1.2 ounces) of freeze dried strawberries, lightly chopped
  1. In a large pot, mix the butter and the marshmallows together until the marshmallows melt completely.
  2. Mix in the rice crispies until evenly coated and transfer mixture to a brownie or cake pan lined with parchment.
  3. Set aside to cool.

I have some millet crisps!! Perhaps I will try this with that and let you know how it goes! :)

Ohh yum!!! I love millet- it’s by far my favorite gf grain. I wasn’t aware that millet crisps were available.
