Happy Seasonal Sunday!

This week I’m keeping it short and sweet. I made 800 mini desserts in the last 24 hours- for the “Be Free Wellness Event” that I hosted this evening. What a wonderful night it was- a great turnout, great music, amazing food all around. ..BUT I must tell you that  I’m Exhausted. Exhausted in the best way possible- but I’m afraid thinking straight to write anything lengthy or typing up a recipe without error is completely impossible at the moment :)

Next week I will feature 2 Bloggers- as well as spend some time updating and increasing my spring seasonal ingredient list. For this week since we are right on the line I welcome you to include recipes from both the Winter and Spring list (see below)

Today I’m going to share an older recipe – one of the first that I ever added to this site. We enjoy this easy soup often.

Curried Carrot and Squash Lentil Soup

as I mentioned above- this week you may select an ingredient from either the Spring or Winter List. Next week will be Spring only. AND if you have any suggestions for the new list- I’d be happy to add them.

Winter (December 21st- March 20th): Beef, Game, Pork, calf’s liver, Buffalo, Duck, Grains, Venison,Chicken, chicken livers , turkey ,Goose , Duck, Guinea fowl, Squid, Lobster, Sea Bass, Scallops, Pacific Yellowtail, Pacific Cod, Monkfish, Halibut, White Beans, Lima Beans,White Beans, Maple Syrup, Rosemary, Sage, Mushrooms, Mussels, Lentils, Black Eyed Peas, Sugar and Snap Peas, Fennel, Hazelnuts, Walnuts, Sprouts, Bananas, Plantains, Onions, Yellow Onions,Shallots, Cipollini Onion, Broccoli, Cauliflower, Cabbage, Red Cabbage, Root Vegetables, Carrots, Daikon, Dates, Chinese Cabbage, Rutabaga, Radicchio, Celeriac,Celery, Turnips, Brussel Sprouts, Pumpkin, Beetroot, Winter Squash, Parsnips, Cabbage, Leeks, Shallots,  Sweet Potatoes. Yams, Potatoes,  Sunchokes (aka Jerusalem Artichokes) Kabocha squash, Okra, French Beans, Radishes, Greens (Arugula, Collards, Kale, Sea Kale, Lettuce, Spinach, Chard) Dandelion Greens, Endive, Escarole,  Watercress, Cauliflower, Water Chestnuts, Avocado, Pears, Apples, Citrus Fruits: Ugli , Tangerines, Oranges, Grapefruit, Lemons, Meyer Lemons, Limes, Papaya, Pineapples, Passion Fruit, Mangoes. Pomegranates and Kiwi’s.

Spring (March 21st- June 20th) : Crayfish, Soft Shelled Crabs, Lamb, White Peppercorns, Green Garlic (Garlic Scapes) Sprouts, Onions, Artichokes, Asparagus (Green, Purple and White) Fava Beans, Bamboo Shoots, Ramps, Loquats, Moral Mushrooms,   Beets, Carrots, Cauliflower, Celery, Leeks, Greens: (Arugula, Lettuces, Kale, Spinach, Swiss Chard) Dandelion Greens, Fiddlehead ferns, New Potatoes, Parsley, Peas, Radishes, Rhubarb, Samphire, Spinach, Zucchini Blossoms, Sorell, Heirloom Tomatoes, Watercress, Raspberries. Strawberries. Pineapples, Mango, Cherries, Apricots. Key Limes, Meyer Lemons, Oranges. (Naval Oranges)

  1. Recipes must contain one Seasonal Ingredient (See above for the list of foods that are currently in season)
  2. You may link up old or new recipes. Wonderful food is always worth sharing! Feel free to share up to 6 recipes each week.
  3. Gluten Free Recipes are NOT required- this event is meant to inspire ideas for all. However I do ask that if your recipe is Gluten Free that you give it the “GF” Label.
  4. Please include a link in your blog in reference to Seasonal Sundays so that your readers may also participate.

This week I will be sharing my new recipe for Key Lime Pie Cupcakes with Coconut Butter-cream Frosting. and.. I have been working on making my basic white cake recipe vegan! All of this will show up  at some point this week. :)

It was time!! Though while we are having sunshine- our temps this week are around the 30's.. not so spring like.

Empanadas are a new family favorite and we are sure to be eating them through the Spring and into the Summer .. varying the fillings to fit the changing seasons.
