Ohh Butternut Squash.
Not ONLY is this squash incredibly delicious and one of the BEST parts of fall (they come in a close tie with pumpkins in my world).. but it also has a plethora of Health Benefits. Its High In Dietary Fiber, Low Fat- loaded with potassium and Vitamin B6 and Folate! The past month or so I have had an absolute blast dreaming up and putting these recipes together. Hope you enjoy!
