Every day, I receive emails, and facebook messages with baking substitution questions. With the explosion of food intolerance and allergies- I have found that no two of us have the same exact dietary needs. One of the best things we can each do is spend a little time learning how to bake with the ingredients we can use.
Roughly one year ago Iris Higgins and I began a huge project to write two cookbooks that details how to use and exchange 12 different Gluten Free Flours, How to replace Dairy, Corn, Soy, Eggs and Refined Sugar . We wanted to make life easier on each of you. We made many of our recipes upwards to 50 times with different flours, with different ingredients to replace all of the common allergens. We took notes and studied intensely what happened each time we made a change to a recipe. We did it all so that we could fill the pages of our books with useful information that would save home bakers times and money. Gluten free baking can be an absolute joy- its just a matter of knowing where to begin.
In this weeks podcast Iris and explain for 40 minutes how to make substitutions! We Discuss:
- How to Substitute Liquid Sugar For Granulated, and how to exchange any granulated for granulated.
- Tips for Baking with Stevia
- How to replace dairy in any recipe.
- Our favorite flour combinations. (With and without grains)
- The flours we love using to make cake!
- We discussed how to exchange flours (Grain and Grain Free)
- How to bake without Eggs!
If you have any more questions, most likely the answers can be found without our Books- The Essential Gluten Free Baking Guides Part 1 and Part 2.

This book looks wonderful! Should I be drawn, I would like to win part 1. I’m still new to gluten free baking and so haven’t tried too many flours yet, but so far I’ve had the best results with rice flour and coconut flour.
I’d love to win part 1 ! = D
I would like to win either one, I have been gf for awhile, but always looking for more information and recipes. Thanks!
I’d love to win part 1. A quick question for you: do your substitutions include subs for xanthan gum and guar gum? I definitely CAN’T handle either. Great blog!
I would love to win either Part 1 or Part 2. I bake with a lot of different gluten-free flours but would love to know more. Some of my favorite flours are coconut, sorghum, and chickpea flour! Thanks!
I’m already a subscriber to your blog, it’s great! Thanks for all the info!
I shared this give-away on my fb page!

I would love to win either one of the books. I enjoy sharing cookbooks ,recipes, and blogs with others at our Wellness Center meetings. We have started having potlucks to introduce new foods and recipes .

I love baking with coconut, almond, and tapioca flour. I haven’t tried chesnut or any others yet. I would be happy with the pat one cookbook.

Although both books look awesome, I would like to win The Essential Gluten-Free Baking Guide Part 1. My favorite flours to bake with are buckwheat, teff, and coconut; however, I have not had too much experience with many flours due to lack of knowledge of how to use them/make substitutions. Thanks for the giveaway!

I’d like to win part 1. I can only cook with almond and coconut right now, so those are my favorites!
I would love Book 2, but would love either one. Just diagnosed gluten intolerant in January and still new to all this basically. Would love any tried and true recipes as I have had many failures, but still plugging on! Love that there are so many resources out there now including yours. Thank you!!
I would love to win Part 1. I’ve been learning to bake with almond and coconut flours. I was recently diagnosed with diabetes and have been researching different recipes as I’ve given up nearly all grain. I would love to learn to use more alternative flours.
I have the first book, my son loves chick pea flour!! It would be super to have your second book!!!
I would love to win part 2. Sorghum is one of my favorite flours because I really like the texture and whole grain quality. However, I am really loving your posts and am expanding my horizons.

I would love to win book one. I am just learning to use the different flours since I found out I was allergic to so many common foods. I am going to try coconut and almond flour this week.
I listened to the pod cast. I liked the discussion about stevia and how to best substitute it. Also, I was curious about the differences in rice flours so that was helpful information.
I am still new to eating gluten and allergy free so I would love to win your first book. I have been trying to express to my family how much better I feel eating allergy free and want to bake for them to show you can still eat the things you love. I have failed so far. .

I forgot to tell you what flours I use. I mostly use Bobs red mill all purpose flour, rice flour, tapioca flour and potatoe flour.

How can one choose from 2 baking guides that will help in so many ways. You can’t have one with out the other. Of course I would love both, and the flour I love to cook with Almond & Coconut.

I would honestly be super beyond grateful for either part 1 or 2. Baked goods were on the top of my favorites list when I had to make some lifestyle and diet changes and it was the hardest category for me to “give up.” I’ve been so intimidated by the idea of gluten free baking that I haven’t figured out much about how to do it successfully, so I just haven’t been baking. (Sad, I know.) I would love to have a resource (that is accurate…by people who actually know what they’re talking about) that can help take the daunting factor out of the equation and inspire me to start baking again…gluten free! =) I would love to be able to successfully use almond and coconut flours in baking.
I’m a subscriber too. =)
I would love to have Book 1. I am just beginning GF baking and would like to learn more!
I am a new subscriber
I’m an almond and coconut flour fan, so I’d love to win Part 1. English muffins and fig newtons? I’m there!

Wow! I learned so much from listening! The most useful was that xylitol can make some cookies more moist, which totally explains the cookies that I made this morning that didn’t get as crisp as the author said they would!
I would love part One. I am just learning how to eat Gluten-Free!

I think I would choose part one if I won. I love to use chickpea flour to make crepes/flatbreads. Delicious and nutritious!
I would love the first baking book so I can learn more about baking with almond flour.
I’ve only ever used the premixed gluten free flours when baking for my gluten free friends, but I’m excited to try some of the other ones in your cookbooks and blog — almond, coconut and chestnut in particular. That being said, I would LOVE to win part one of the gluten free baking guide!

I would love to win the first part. I’m newly all grain, dairy, egg, and soy free. Been most meat free for years but am trying to add some back in through trial & error. I’ve attempted almond flour but it did not turn out correctly. I’m going to listen to the pod cast later when I’m not procrastinating (in nursing school)…I am having trouble substituting in recipes so it sounds perfect for me.
I would love to win either of these! The flours I use most often are almond, brown rice, sorghum, and millet. I have enjoyed buckwheat and teff when I’ve used them and would like to use them more. I’ve had hits and misses with quinoa, so would like to learn more about how to make it a success every time!
I’d love to win part 1 or 2. I love GF baking! I love baking with rice flours and I’m playing with coconut and almond flours.
I made sure to share this on FB!!
Also mentioned on twitter!! Yes, I really do want to better my odds!

I loved the podcast! Everything in it was super helpful, as always. My favorite part was how to exchange the sugars. I read about this in your first cookbook, but I liked watching/hearing you explain it. All of the other areas you covered were very informative as well.
