Ingredients
- 2 cups Gluten free Bisquick Mix
- 2 Organic Eggs
- 1 Small can of Organic Pumpkin
- 2 teaspoons Cinnamon
- 2 teaspoons Ground Ginger
- 1 teaspoon Salt
- 6 tablespoons Softened Earth Balance Butter
- 1 teaspoon Sugar
Directions
Ok- I’m going to upfront. Are these Healthy? No. They are made of white flour. I made them purely by accident. But it was A GREAT accident. One I might just make again and again They are a fun little flare on your traditional Baking Powder Biscuits. Eat them with soups, scoop some ice cream over them, Serve as part of a breakfast Sandwich.. the options are endless.
- Preheat Oven to 400 Degrees
- In a Large bowl Mix the Flour, Sugar, Salt, and Spices.
- Cut in the softened butter into tiny pieces.
- Mix in the eggs and can of pumpkin. The Dough will be soft but not very sticky.
- Roll out to an inch or more thick (they will not rise all that much) Using a biscuit cutter or the rim of a glass cut into circles and place on a baking sheet..
- Bake for 15 minutes and Eat!

Mmmm. I make a similar biscuit with sweet potatoes and love them!! So many good ways to use them. But, I never thought of pairing them with ice cream. That’s got my wheels turning.
I love adding squash/pumpkin to everything (as Im sure you have noticed I made these by accident.. I think I was attempting gnocchi..it didn’t work so I threw the dough in the oven just as an experiment and out popped these awesome little biscuits.
Biscuits and Ice cream… I think you are on to something! I mean strawberry short cake is SO good… maybe a fall take on that??
