What is Seasonal Sundays You may wonder? It is a Weekly Recipe Link-Up Event Hosted here at Real Sustenance on the HOME BLOG PAGE Each Sunday to Share and Discover Fantastic Seasonal Recipes.

Each week I highlight one blogger with a little write up dedicated to their site. I select this blogger from the group of participants from the previous Sunday event.

Seasonal Food is all around a beautiful thing. It supports local farmers & the environment by helping to eliminate damage caused by shipping foods thousands of miles. Not only do Seasonal Crops taste better but they  are also at their peak nutritional value!

It  is my primary goal to create a hub of fun and creative food ideas that help make it simple and delicious to eat Seasonally and Locally and bring inspiration to each and every one of your kitchens.  Here are the rules:

  1. Recipes must contain one Seasonal Ingredient (See below for the list of foods that are currently in season)
  2. You may link up old or new recipes. Wonderful food is always worth sharing! Feel free to share up to 6 recipes each week.
  3. Gluten Free Recipes are NOT required- this event is meant to inspire ideas for all. However I do ask that if your recipe is Gluten Free that you give it the “GF” Label.
  4. Please include a link in your blog in reference to Seasonal Sundays so that your readers may also participate.

Hi Brittany,

Here is my recipe for

Creamy Cauliflower Curry

Ingredients:

• 1 whole cauliflower, chopped into bite sized peices

• 1 TBS coconut oil

• 1 cup coconut milk (optional and to taste)

• 2 onions, diced

• 2 tsp fresh ginger, grated

• 2 TBS lemon juice

• 1 tsp lemon rind

• 2 TBS almonds

• 2 TBS sesame seeds

• 3 cloves garlic, minced

• 1 TBS cumin

• 2 tsp turmeric

• 1 tsp ground cloves

• 1/2 tsp cayenne pepper

• ¼ cup freshly chopped coriander to serve

Method:

Place ginger, almonds, sesame seeds, garlic, lemon rind and spices and coconut milk into a blender and blend until smooth

Sautee onions in a deep pan with coconut oil until translucent

Add cauliflower and stir into onions, cook for 2 minutes and then pour spice mixture into the pan

Cover pan and reduce heat to medium and cook for about 10 minutes stirring occasionally

Add lemon juice and stir cooking for another 2 minutes

Serve in wide bowl and sprinkle with freshly chopped coriander

Brittany,

This is a GF side dish and I keep modifying it to include different veggies…it is my new favorite way to make vegetables and my husband actually enjoys them now!

Oven Roasted Brussel Sprouts (can be used for diced sweet potatoes and/or vegetable medley's including broccoli, garlic cloves and asparagus)

1 package Brussel Sprouts

2 sprigs fresh Rosmary

small bunch fresh Dill

2 Tbs Extra Virgin Olive Oil

2 cloves garlic, crushed

Salt to taste

Directions:

Preheat oven to 400 degrees

cut bottoms off of brussel sprouts and cut each in half from top to bottom and place in a baking dish remove rosemary leaves from stem and scatter over brussel sprouts

chop fresh dill and scatter over brussel sprouts

crush fresh garlic in a press and scatter over brussel sprouts

Add EVOO-start with 1 Tbs and add second one if necessary..toss with tongs to get EVOO evenly distributed

bake for 25 minutes and enjoy!

Sounds wonderful!! Thanks for sharing :) We love brussel sprouts- though Im quick to just smother them in garlic (like I do everything else :) Rosemary and Dill sound so good.
