Chicken Tamale Soup

Now that we are headed straight into winter I find myself making soup- at least 2-3 nights a week. For me- making soup is a mindless activity. It comes easy to me- easier than converting and writing recipes for Christmas Cookies, breads and cakes.. (Though I LOVE doing it all) Sometime I need to just throw things into a pot and know that a good dinner is guaranteed. Soup’s and Sauces is where my love for cooking began- I spent a substantial amount of time learning spices and understanding just what role each one played and how the  different flavors danced when put together. Soup is an awesome canvas to learn flavors- its almost instant gratification. The trick is adding just a little spice at a time and giving it a taste test 15 minutes or so after it has had a change to open its flavors.  When I make soup- I’m usually not hungry by the time its time to eat- because I have sampled it so many times while making it.

Tamales hold a special place in my family. I often get really strong craving for them. If you have never had them I reccommend you try my recipe  at some point  (or even if you have had them- I think you’ll especially love this recipe).  Last night was one of those nights that I didn’t feel like making any sort of mess in the kitchen. So I pulled out my big soup pot- and deconstructed the basic chicken tamale ingredients into a soup- and added some veggies.

This Soup is similar to say a Tortilla Soup- Its extremely comforting.  I wish I had thought to do this a long time ago. This will be a regular meal from here on out in our house!

This Recipe makes a BIG Pot of soup. Enough to feed a family of 8 in one sitting. If you don’t have a family that large- you will be thankful for the leftovers the next day.  I thoroughly enjoyed this soup for breakfast today! :)
