A Gluten/Dairy/Egg/Soy Free take on My Husbands favorite Football Food!

Ingredients

  • 12 Organic Chicken Drumsticks
  • 1/2 cup Millet Flour (or other Gluten Free Flour of choice)
  • 2 Organic Eggs + 2 TBS Oil (Or- 1/2 Cup of Dairy Free Milk + 1 TBS of Apple Cider Vinegar)
  • 1 cup Crushed Rice Chex Cereal
  • 1 tablespoon Garlic Powder
  • Dash of Salt and Pepper

Wing Sauce

  • 1 Stick of Earth Balance Butter
  • 1/2 cup Franks Red Hot Sauce (Or more for a
  • 1 tablespoon Garlic Powder

Last evening I had every intention of creating this elaborate fall dinner- and my husband proclaimed he was sick of squash and needed some man food.. aka Fried Chicken with Buffalo Wing Sauce. So here’s what I made..  In between crunches (this breading is soo crispy!) I heard endless “Mmmmmmms” So heck- I figured I might as well pass this easy little recipe along to all of you!

This recipe of COURSE is Gluten/Dairy Free. And if you dont do the egg thing.. make a “Butter cream” to dip the chicken in instead. You do you this by combining Dairy Free Milk and Apple Cider Vinegar. Easy Peasy. The Chex Cereal is a cheap alternative to Gluten Free Bread crumbs. When used as breading its better than Panko. By a long shot! For this recipe I found I liked the cereal crushed to almost a powder- you can do this in a food processor or by going at it with a rolling pin over a sealed bag of cereal (my husbands idea)

ps.. this IS NOT diet food.. even though its not deep friend. :)

  1. Preheat oven to 450 degrees
  2. place 3 bowls on the counter. In the first place the Millet Flour, Garlic Powder, Salt and Pepper. In the Second whisk together the eggs and oil (or Buttermilk) In the 3rd place the finely crushed Rice Chex Cereal.
  3. Using a paper towell wipe down the chicken drumsticks to remove excess moisture.  One by one place them in the flour mixture, then in the egg and finally in the Cereal. Place on a baking sheet.
  4. Drizzle Oil (of choice) over all of the chicken. I made 12 drumsticks- and drizzled roughly 2 Tbs of Oil on the Chicken. Bake 45 minutes- 1 hour. Flipping once halfway through.
  5. To make Sauce- In a saucepan Melt the Earth Balance Butter, add the Red Hot and Garlic Powder. Stir to combine.
  6. Serve Sauce and Drumsticks together. (and some celery sticks too if you want to)
