Asian Style Lemon Chicken. (Paleo/Gluten/Grain Free)

This was a family favorite growing up. I would look forward to the smells of lemon chicken came lingering up to my room while I worked in my room on homework. Creating this in my kitchen today brought back such a flood of memories!

You guys are going to love this recipe, its just like the lemon chicken you’ll get at PF Changs… only of course this version is a trillion times healthier.

Asian Style Lemon Chicken.

 

  • 2 Tbsp Oil
  • 1.5 pounds of Chicken Thighs, chopped into bite size pieces

Batter

  • 2 Eggs
  • 1 Cup Arrowroot or Tapioca Flour/Starch
  • 1/4 Cup Coconut Aminos

Coating

  • 1/2 Cup Arrowroot or Tapioca Flour/Starch
  • 1/2 Tbsp Coconut Flour
  • 1 Tbsp Garlic Powder
  • 1 tsp Salt
  • 1 tsp pepper

Sauce

  • 2 Cups Chicken Broth
  • 5-6 Tbsp Honey
  • 1/4 Cup Lemon Juice
  • 3 Tbsp Tapioca Flour
  • 1 tsp grated ginger
  1. In a small bowl mix all the ingredients for the batter.
  2. In a separate bowl mix together ingredients for the coating.
  3. Drop chicken pieces in the batter and then dredge in the coating.
  4. Meanwhile heat up a skillet over medium-low heat with 2 T of oil.
  5. Cook chicken until no longer pink in the middle.
  6. Add in all the sauce ingredients and simmer until sauce has thickened slightly.

Made this tonight and paired it with some steamed broccoli… it was AMAZING. The first words out of my husband’s mouth were “this tastes JUST LIKE take-out!” It has that gummy, sticky consistency you get when you order Chinese food with those thick, sugary sauces on them… and yet we could eat this one guilt-free and still feel amazing afterward!

Sure! Can you have regular gluten free soy sauce or liquid aminos? Both would taste great!

I made this last night and it was super easy and tasted good. I used ener-g egg replacer and a smidge more water for the batter. I’d warn against letting the chicken and sauce “cook” together for any length of time like I did (I thought the flavour might infuse…). It made the tapioca really do it’s thing, leaving the chicken kinda slimy or “snotty” as my husband said. The sauce was still delicious though, so I’m bound to try again with just a quick toss in the sauce at the end :)
