If you swooned yesterday for my bacon jam recipe, then this breakfast sandwich is for you!

Sure classic breakfast sandwiches are good, but this one takes delicious to a whole new level. The bacon jam is the perfect combo of sweet and salty.  Combine that with a fried egg and cheese and your in for an amazing experience.

Feel free to throw in some sliced avocado, sausage patty, or whatever your heart desires! The combinations are endless!

 I created and posted 3  extra crispy basic waffle recipes. Select whichever works best as your base:

A Paleo Recipe

A Paleo /Egg Free Recipe

 Basic Gluten Free/Vegan Recipe  (for those with nut allergies).

Breakfast Waffle Sandwich with Bacon Jam.

 

  1. Make the waffles and bacon jam. 
  2. Melt butter in a pan on medium heat.
  3. Fry egg to your preference.
  4. Assemble the sandwich. Place into a lightly buttered or oiled skillet with a lid- and toast until the cheese has melted and the waffles are lightly golden.

What kind of waffle maker do you have or where can I find one like that? I love that it looks like Eggos! My kids would find that fun! I’ve only seen the square ones or the ones that are round but split into 4. Thanks for all you do! I love your recipes!!

Get out of town!! We are heading out early tomorrow morning for a whitewater rafting trip and I am bringing your AHH-MAZING waffle breakfast sammies with bacon jam. Goodbye awful GF bread…hellooooo crispy waffles! MORE PLEASE!!!! :-)

Made the bacon jam yesterday, made this sandwich for breakfast. Now you can’t go wrong with a waffle/egg/cheese breakfast sammie, of course. But the bacon jam made it positively *sublime*.
So. Freaking. Good!

Ok, I have my waffle iron….now, how much batter do you use typcially for each waffle? My waffle iron suggest 1/2 c batter but it seems like a lot. Suggestions? I can not wait to make these sandwiches!!! So excited!!
