I am out of my mind excited for this!  I have been dreaming up the idea for months. Like all of you I love food- and love eating locally and Seasonally as much as possible. Though even with all of my constant recipe searching its sometimes hard for me to think beyond what I already know in regards to Vegetable Preparation in particular for example:  We love Brussel Sprouts- but to be honest I only know of 1 way to prepare them.  Time for that to change..

Being there is an abundance of creative bloggers these days – it occurred to me that maybe with a little collaboration we could together support the idea of  Seasonal Foods and in turn nourish our  families (and ourselves of course!) with Fruits and Vegetables that are abounding in nutrition. (verses those that are Preserved, Shipped long distances and artificially ripened)   Really.. What better way to start 2011?

Today for my Submission I am excited to Feature:

Gluten/Dairy/Egg Free Perogies with Sweet Potato, Bacon and Caramelized Onions

The Combination of Sweet Potatoes, Bacon, Rosemary and Caramelized Onion is one I wish I had discovered sooner. These Perogies are  slightly sweet combined perfectly with a Salty Bacon Flavor = Unbelievably comforting.

Winter (December 21st- March 20th) : Beef, Game, Pork, calf’s liver, Buffalo,Grains, Venison,Chicken, chicken livers , turkey ,Goose , Duck, Guinea fowl, Squid, Lobster,White Beans, Lima Beans, Maple Syrup, Rosemary, Sage, Mushrooms, Mussels, Lentils, Black Eyed Peas, Sugar and Snap Peas, Fennel, Hazelnuts, Walnuts, Sprouts, Bananas, Plantains, Onions, Yellow Onions, Cipollini Onion, Broccoli, Cauliflower, Cabbage, Root Vegetables, Carrots, Daikon, Dates, Chinese Cabbage, Rutabaga, Radicchio, Celeriac,Celery, Turnips, Brussel Sprouts, Pumpkin, Beetroot, Parsnips, Cabbage, Leeks, Shallots,  Sweet Potatoes. Yams, Potatoes,  Sunchokes (aka Jerusalem Artichokes) Radishes, Greens (Arugula, Collards, Kale, Sea Kale, Lettuce, Spinach, Chard) Dandelion Greens, Endive, Escarole,  Watercress, Cauliflower, Water Chestnuts, Avocado, Pears, Apples, Citrus Fruits: Ugli , Tangerines, Oranges, Grapefruit, Lemons, Meyer Lemons, Limes, Papaya, Pineapples, Passion Fruit, Mangoes. Pomegranates and Kiwi’s.

Duck is also in season over here in Belgium because it is the Wild season!

So, I will include a festive Duck dish!

The Perogies were so much fun to make! And the Filling..a little different than the usual- but really pretty wonderful (at least the Hubby and I were pleased with it ) Im excited to try out some different filling ideas now that I have a Perogie dough recipe that Im really happy with!

and I agree- Great Recipes! Such a wonderful first Seasonal Sunday!
