If you ever needed a reason to get out of bed in the morning, this would be it. When I was little my dad used to always let me pick out a ‘monday morning treat’ to entice me to get out of bed for school on time. Little did he know I would have gotten out of bed on time anyways but he really knew the way to my heart! As an adult, these would be my monday morning treat choice time and time again. Vanilla Bourbon Pecan Pancakes, there’s just nothing better.

Vanilla Bourbon Pecan Pancakes.

 

  • 1 1/2 Packed Cups Blanched Almond Flour
  • 1/2 Packed Cups Tapioca Flour
  • 1/4 tsp Salt
  • 2 tsp Baking Powder
  • 2 Eggs
  • 1/4 Cup Oil or Melted Butter (dairy or nondairy)
  • 2 Tbs Vanilla Extract
  • 1/3 Cup Bourbon
  • 1/3 Cup Coconut Palm Sugar or Brown Sugar (or other granulated sugar of choice)
  • 1/2 Cup Pecan pieces
  1. Combine dry ingredients in a bowl (almond flour, tapioca, salt and baking powder)
  2. In a separate bowl mix in the eggs, oil, vanilla, bourbon, brown sugar, and pecan pieces.
  3. Pour wet ingredients into bowl with dry ingredients, and mix.
  4. Heat up a skillet over low heat with enough butter to coat the skillet.
  5. Pour 1/4 cup of batter into skillet, pancakes will take about 3-4 minutes per side.

Sugar free? What about the 1/3 Cup Coconut Palm Sugat or Brown Sugar (or other granulated sugar of choice)?

Brittany probably means using xylitol or the other sweetener (begins with an e).

Coconut Palm "sugat" and Brown Sugar are listed as ingredients in the recipe in specific quantities.
There is absolutely NO mention of Xylitol as an ingredient or quantity.

Brittany,

You are amazingly creative with all your recipes...you make so much effort and I appreciate all your hard work!

I am allergic to egg white so I will try this recipe with flax eggs and maybe with yolks as well. I welcome any suggestions you have.

What kind of bourbon is gluten free

Any bourbon that does not have caramel color or something else gluten-y added to it is gluten free. The gluten protein breaks down in distillation, according to tests done by the Dutch many years ago. They definitively showed that Maker's Mark does not have gluten in the final product. Most manufacturers now have the gluten information on their websites for specific products.
