Today we’re going back to the basics! And I must tell you the truth- regular grilled cheese has NOTHING on this. Nothing. Given the opportunity to eat it with bread again, I’d choose this.

The key to this perfect sandwich is the crispiness of my waffle recipes. Not all waffles are created equal and I promise you that my recipes will make this sandwich magical.

Want to upgrade your grilled cheese to become something fancier?

You might try adding:  slices of fresh tomato, figs, tart apples, pears  sweet grapes like Concords, tart grapes like under-ripe Muscats, kiwi, cranberries, sliced strawberries, dried fruits like dried cranberries, raisins, currants, or prunes. For a savory spin try adding: sliced hot peppers, pickles, avocado, fresh basil leaves,  tarragon, or  rosemary.  You might love adding  jams, chutneys or varying condiments like buffalo wing sauce, dijon mustard, Sriracha or a hot pepper relish. And finally of course there are lunch meats and roasted veggies! There is so much that can be done!

Grilled Cheese Waffles.

 

  1. Melt butter on low in a pan.
  2. While butter is melting, place your choice of cheese (dairy or non dairy) in between two waffles.
  3. Place waffles in the pan and cover. Cook for about 3 minutes per side  on medium or until cheese has melted and the waffles are toasted.

NOTE: My waffle recipes freeze really well. If using a frozen waffle throw it in the toaster once to thaw and start getting it crispy prior to adding the cheese and placing it in the pan. If using freshly made waffles they can go straight into the pan.

These look delicious!!! The only problem is that I currently have a belgian waffle maker, not one with small holes. Or I have one of those sandwich maker things….any chance either of those would work? I can’t seem to find any reasonably priced small hole waffle makers anywhere.

Is there a walmart located near you?? I have a cheapo $10 waffle maker than makes thin waffles that I got from there. I have a fancier belgium maker like you and didn’t want to spend a lot on getting a second. I mean technically you could have belgium grilled cheese waffles..but they won’t be quite as good. Its like eating grilled cheese on a giant slice of bread :)

Do you mind sharing what brand of waffle iron you use? I went to 2 Wal-marts and Target, but couldn’t find anything with small holes that looks like it will make thin waffles. Mine right now is 2 squares, and the holes are really big, so when trying to make a sandwich, the filling leaks through.

The vegan! But it’s due to having an egg intolerance! I’ve tasted both and they are both really good :)

Just made them for lunch to feed 7 hungry kids and 2 adults. Had to make 3 batches but well worth it. Everyone liked them and they were so easy to make. Will definitely be making them again. I made the Paleo version. Yum!
