Without hesitation I can say that biscuits are my #1 favorite food..and well Bacon- I’d say it speaks for itself. Throw in some maple syrup which always makes bacon taste even better and you’ve got yourself some killer biscuits.

These babies are the perfect salty & sweet breakfast or brunch. Good luck not eating too many!

 

Paleo Maple Bacon Biscuits.

 

  • 2 packed cup blanched almond flour.
  • 1 cup potato starch (tapioca starch will work too but the results wont be quite as spectacular).
  • 1/2 teaspoon salt
  • 3/4 teaspoon baking powder (I use double acting)
  • 1/2 cup + 1 Tablespoon butter (dairy or nondairy) or shortening or bacon lard for extra bacon flavor.
  • 5 crispy strips of bacon, chopped
  • 1 large egg
  • 3/4 teaspoon vinegar or lemon juice
  • 1/4 cup + 1 Tablespoon maple syrup
  1. Preheat oven to 350 degrees
  2. Whisk together the almond flour, potato starch, salt, baking powder, and bacon. Cut in the butter to pea-sized pieces.
  3. Whisk together the egg, maple syrup, and lemon juice in a separate bowl and stir into the dry mix.
  4. Place dough on the counter, cutting board, or sheet of parchment paper and pat down until it is an inch thick.
  5. Lightly dust with additional almond and potato flour as needed to prevent sticking.
  6. Cut dough into six 3-inch wide biscuits and bake for 25 minutes
  7. Optional: Make a glaze by mixing together maple syrup and powdered sugar and drizzle on top!

Recipe Notes:

  • You can make your own healthier powdered sugar by throwing the granulated sugar of choice into a coffee grinder and whizzing until powdery. (This recipe would taste great with homemade coconut palm sugar mixed with maple syrup for the icing).

this recipe is not dairy free! you list butter as an ingredient?!?

Ah! I forgot the note about earth balance OR butter working.
Also the shortening and bacon lard options are dairy free. I always give options with my recipes so they can work for varying diets.

Can you substitute a ‘flax’ egg for the regular egg and still get decent results?

You’re welcome to try. I’m not 100% sure that they will cook through properly- unless I make them myself again that way.

Hi darlin’!
Have turned a lot of people on to your blog and recipes! Some with Candida, others with Hashimoto, and more. But I have a challenge. A friend gave me fresh pitted cherries from her trees and I put them in the freezer as I don’t have a grain free recipe for them. Afriad to just substitute or add to something due to the moisture content. My hubby is diabetic and grains interfere with his insulin receptors. Any recipes or suggestions??

I’d love to try, but allergic to almonds (in addition to wheat.) any other substitute flour?

I have tried using pecan meal in place of almond flour in some of her recipes and it works. If it is not fine enough I run it through the food processor, just be sure not to run it long enough to make pecan butter. I am also allergic to almonds. Haven’t tried this one though.

I’m not totally sure. Potatoes are considered safe starch on the Paleo diet but I’m not sure about straight starch ( which is why I mentioned tapioca since that one is def Paleo friendly!)

These sound and look amazing. Sadly I’m living a low carb way of eating and I don’t think I can have potato or tapioca starch. Any other suggestions to replace that item?

When you say potato starch what exactly are you referring to? The water from boiled potatoes?

No :) I’m talking about a ” flour” that you buy from the grocery store called potato starch. It’s similar to corn starch and can be found with other gluten free flours.

Made these for dinner tonight. I used bacon lard since I had a whole jar I had been collecting. These are amazing. My husband could not believe they were paleo. Like I was lying to him or something. Thanks for the awesome recipe.

But what about those of us with nut allergies? There’s never a straightforward substitute for almond flour and it will send me to the hospital.

Its hard to provide a substitute because there is no seed flour on the market that works as a straight replacement!
