Here’s another new spin on an old classic, the Reuben Sandwich! I simply added my delicious waffle recipe with the classic Reuben filling.
Since Rye bread is clearly filled with gluten, instead I took Caraway seeds and added them to my extra crispy waffle recipes to get a similar taste that you would with rye. For those that need to be Dairy Free- you can simply leave the cheese out or use a slice of nondairy cheddar.
Since I didn’t want ANYONE to miss out on this recipe (and my other waffle sandwich recipes) I created and posted 3 extra crispy basic waffle recipes. Select whichever works best as your base:
Basic Gluten Free/Vegan Recipe (for those with nut allergies).
Reuben Waffle Sandwiches.
- Use my Waffle Recipe, leave out the sugar and add 1tsp Caraway Seeds
- Corned Beef slices OR Pastrami Slices
- Sauerkraut
- Swiss Cheese Slices (Dairy or non-dairy)
- Use my Waffle recipe, leave out the sugar and add 1 tsp of Caraway Seeds.
- Assemble sandwich with the filling ingredients: Pastrami, Sauerkraut, and Swiss Cheese
- Heat butter in a pan over low heat.
- Place assembled sandwich in pan with a lid until cheese is nice and melty (flip once)
Yields approximately 4 Sandwiches if you use the full waffle recipe.

I would like to use the Paleo recipe… can I substitute almond milk for the “dairy”?
Yep!
