Happy Seasonal Sunday!!

Sorry to Anyone that tried to come link up last Sunday- I was hacked and shutdown for several days.

So Its spring. Its really spring- its getting a little warmer here in Rochester Ny. The last several mornings I was awoken by a piercing bright light in my eyes coming through our skylight above our bed. Its been wonderful- while its waking me a little earlier than I might intend- I’m grateful.

This week I would like to highlight a wonderful blog that I just recently discovered; Elegantly Gluten Free . Its writer Pat – is very sweet! Her site is sprinkled with Recipes, Information on Celiac Disease, and Safe Gluten Free Eateries. Last week she shared an recipe for Parsley Sauce! (I thought it was so clever).

There’s a lot going on this week at Real Sustenance- April in the Raw was launched here April 1st. (I shared a recipe for a Decadent 16 layer Cacao and Peanut Butter Raw Cake. And then Yesterday I had a wonderful guest post here from Robyn Boyd Author of Rawsome recipes. She shared her recipe for Rawsome Garden Burgers with raw Mayo and BBQ Sauce. And TODAY there will be a Smoothie recipe shared at the Bitt of Raw blog. So much healthy inspiration happening & I’m loving every minute of it! Check out the April in the Raw Page for more information- to follow along and to share some of YOUR recipes. (Everyone is invited to participate)

Today I thought I would carry  the raw theme into my Seasonal Sunday Recipe.  I have been experimenting some with Nut Cheeses- and from that exploration I came up with this fun little easy recipe.

Raw Grape Leaves Stuffed with Cucumber & Dill Spiced “Goat Cheese”

Here are the rules..

Spring (March 21st- June 20th) : Crayfish, Soft Shelled Crabs, Lamb, White Peppercorns, Spring Onions, Sweet Onions, Green Garlic (Garlic Scapes) Garlic, Cilantro, Chives,Cucumbers, Hyssop, Sprouts, Onions, Green Beans, Potatoes, Fingerling potatoes, New Potatoes, Artichokes, Sunchokes, Broccoli Rabe, Corn Shoots,   Asparagus (Green, Purple and White) Fava Beans,Turnips,  Bamboo Shoots, Ramps, Loquats, Moral Mushrooms,  Wood Ear Mushrooms, Mushrooms (general) Beets, Golden Beets, Carrots, Cauliflower, Celery, Leeks, Greens: (Lettuce, Miner’s Lettuce/Claytonia, Arugula, Kale, Spinach, Baby Spinach Swiss Chard, Rainbow Chard) Red Mustard, Ramps, Dandelion Greens, Fiddlehead ferns, Parsley, Peas, Pea Shoots,  Radishes, Black Radishes, Radish Sproutes, Rhubarb, Samphire, Stinging Nettles, Cardoons,  Cabbage, Zucchini Blossoms, Sorell, Heirloom Tomatoes, Watercress, Avocado, Figs, Raspberries. Strawberries. Pinapples, Mango, Kiwi’s Cherries, Apricots. Key Limes, Limes, Meyer Lemons, Lemons, Oranges. (Naval Oranges), Grapefruit, Grapes, Kumquats, Peaches (late spring) Melons( also late spring) &  Mint.

Thank you for featuring my blog this week! I'm so glad I found Seasonal Sunday — I love the idea of cooking what's fresh. This week I've linked Roast Chicken with Savory Vegetables — it has parsley, celery, onion, garlic, carrot and basil for flavoring. Whole foods, you might say, healthy for just about anyone, gluten-free or not.

Now I want to experiment with grape leaves, Brittany. lol They look amazing! :D Oh, and I saw some of the pics of the food from that wellness event…WOWZA!!!! You rock it!
