Gluten/Dairy Free, Vegan Buttercream Frosting

Just as good as the real thing- only healthier. Free of Trans Fat and Hydrogenated Oil.

Ingredients

  • 3 cups Confectioners Sugar
  • 1 cup Earth Balance buttery sticks

Directions

It doesn’t get much easier than this! Use on cakes, cookies or eat it off the spoon.

  1. Combine softened earth balance butter and powdered sugar with a hand mixer.
  2. Add more sugar for a thicker frosting, add more earth balance butter to thin it out.

This Frosting will hold its shape at room temperature.

Experiment with extracts and food colorings if you so desire to turn this delish frosting into any flavor under the sun.

A few ideas:

  • Vanilla: vanilla extract, Fresh vanilla bean
  • Mint: Fresh pureed mint leaves, mint extract
  • Chocolate Mint: Cocoa powder and mint extract
  • Chocolate Almond: Almond extract, Chocolate, vanilla extract
  • lemonade: 1 TBS of condensed lemonade, lemon zest
  • Chai: Start with 1 tsp of ground Cardamon (add more if you want more flavor) add a dash of vanilla extract.
  • Citrus Ginger: 1 tsp freshly grated ginger, 1 tsp of Orange juice, 1 tsp of vanilla extract, orange zest may be added.

I just made this icing for my daughter’s first birthday. Both of my girls have a milk protein allergy, so this was perfect for us and it turned out wonderfully!!!

I ended up using 2.5 cups of sugar per 1 cup of earth balance butter and then added 1 tbsp of vanilla and some purple icing coloring. YUM!!

While several folks at the party knew that the icing was dairy-free, many did not and I got so many compliments on how yummy it was. The fun part was seeing the looks on their faces when I told them that it was dairy-free and vegan!! :o )

Thank you so much for making this oh-so-simple recipe available so that Piper could truly have a very happy first birthday!!
