  • 1/4 cup Rice Flour (or Millet)
  • 1/2 Cup Sorghum Flour
  • 1/2 Cup Sugar
  • 1 tsp. ground cinnamon
  • 1/4 cup Softened earth balance butter (Cut into pea sized pieces)
  • 3/4 cup hazelnuts, toasted

Directions

This is a fun twist on the traditional apple pie that a close friend sent me! I made this along with Christmas Dinner this year. Had to share  this wonderful recipe!

For the crust I recommend my recipe for Gluten Free/ Vegan Basic Pie Crust.

  1. Make the Pie Crust and place in pie pan.
  2. Preheat oven to 375
  3. Stir first 6 ingredients into a large bowl. Add pears and toss to coat. Spoon into piecrust.
  4. For topping, whisk flour, sugar and cinnamon in a bowl. Add butter and rub with fingertips until mixture resembles coarse meal. Mix in toasted nuts. Sprinkle on top of filling.
  5. Bake for 15 minutes, reduce temperature to 350 and cook until pears are tender and filling is bubbly, for a total cook time of about an hour. Check pie crust to make sure it’s not burnt if it is beginning to brown cover with a pie crust shield. Cool on a wire rack. Serve slightly warm with Dairy Free- vanilla ice cream.
